What are your hours:

Store hours: Monday - Saturday 7:00AM - 5:00PM and Sunday 10:30AM - 5:00PM

When do you make cheese?

We make cheese six days a week on Monday thru Saturday, starting at 4:30AM.

What cheeses to you make?

Union Star produces our own fine cheeses including:

  • Cheddar cheese and cheese curds on Monday, Thursday, Friday, and Saturday.
  • Cheese making at Willow Creek - Wednesdays
  • Mozzarella string cheese - Tuesdays
  • Where are you located?

    We are located in Zittau, five miles southeast of Fremont, Wisconsin, at 7742 County Road II.

    How do you become a cheesemaker?

    A person takes a one-week course in cheesemaking. This is held at the University of Wisconsin in Madison. You will learn about testing and grading of milk, analysis of cheese for composition and judging of actual samples of cheese. A person continues for 12 months as an apprentice under a licensed cheesemaker. Finally, you must pass a State written examination.
