Union star has the best cheese in Wisconsin. The basic cheeses are exceptional. Then they add different spices, nuts, cured meats... to them, and they surpass other cheeses. The cheese itself seems slightly less salty, letting you taste the nuances of the plain cheeses and appreciate the additional flavors.
It is a small cheese factory, the people who own and work there are helpful and informative. If you get there early, you can see cheese curds being made. It's true Wisconsin!
