Artisan cheeses are made in small quantities to achieve a complex flavor profile and striking appearance. The cheese is aged in climate-controlled rooms where a ripening process takes place. The quality of the milk, the temperature of the curing room, type of yeast, and other factors all contribute to the flavor profile of the finished cheese. Unlike mass-produced cheeses, Artisan cheeses are produced using as little machinery as possible to maintain the artistry which comes from handmaking cheese. Visually, artisan cheeses often feature a rind that varies in color and texture. Union Star produces various artisan cheeses including St. Jeanne, Farmhouse Cheddar, Dry Jack, Red Willow, & more.
This has been my favorite place to buy cheese for years. Great variety of cheeses, all made fresh. Prices are good. I especially like the extra sharp cheddar cheese.
